{cookie project} No.006: Soft Oatmeal Raisin Cookies

 The Cookie Project is a year-long experiment to combine my love for baking and trying new things.

Fun fact about me (I guess I’m full of them this week!): I really like raisins.  As a kid, I used to add them to my Cheerios at breakfast.  Now at 30, I always keep them on hand when I need a craving for something sweet.
With my self-imposed ban on sugar lifted, I wanted to get back into the baking groove and these cookies sounded like the perfect choice.  They aren’t “healthy” by any means (1 cup of sugar AND 1 cup of brown sugar), but they are soft and chewy, super delicious and are the perfect treat if you like raisins like I do.

{cookie project} No.005: Healthy Oatmeal Cookies

Since I’m not eating sugar as part of March’s health and fitness challenge, choosing a cookie this month was tricky.  I suppose that I could have made something sweet and delicious and just given them to the kids…but we all know I’m too weak to have that temptation in the house!


Instead, I found this recipe for healthy oatmeal cookies.  They are banana based and don’t have butter, sugar, flour and eggs!  I was a little skeptical about the taste, but they are strangely delicious.  


THE RECIPE
The recipe I used is from the sisters at Favorite Family Recipes.  They also suggest using chocolate chips instead of raisins…I’ll be trying them that way soon!

{cookie project} No.004: Chocolate Chip Snowball Cookies

We had another big snowstorm this weekend and got another six inches.  There’s something so beautiful and cozy about being stuck inside as the flakes fall, don’t you think?  I wanted to make a treat for the kids and snowball cookies seemed like the obvious choice!


Please don’t judge these cookies based on my poor photography!  While a little messy, they are really delicious and tasty with a big cup of hot cocoa.

{cookie project} No.003: Pumpkin Snickerdoodles

I recently found a big can of pureed pumpkin on clearance at Target and it quickly made its way into my cart.  Last fall was full of newborn baby goodness and I wasn’t in the kitchen much.  Besides my go-to Pumpkin Chocolate Chip cookies, most of the pumpkin recipes I found on Pinterest went unmade.  


Better late than never!  On a dreary day in the dead of winter, I made Pumpkin Snickerdoodles.  They were soft, puffy and incredibly delicious.

{cookie project} No.002: Hot Cocoa Cookies

The Cookie Project is a year-long experiment to combine my love for baking and trying new things.

Yesterday was our second “official” Sunday family dinner. Instead of just throwing something onto plates and calling it good, Mark and I decided that we really wanted to embrace Sundays and make them special.  It’s been so fun to create a menu together, work beside each other in the kitchen and create a memory that I hope will stick with my kids forever.  

If you know my husband, you already know that he is an amazing cook.  Sundays have become his day to shine.  I help with the menu and I’m good at following his directions, but I give the credit to him.  But dessert?  That’s all me.

This week I thought I would try a cookie recipe that reminded me of my four-year-old, J.  Almost every morning, after watching me brew my morning coffee, he asks if I could make him a cup of hot cocoa.  I love sitting with him as he tells me random details about super heroes or the latest episode of Wild Kratts.  He chugs his cocoa and is done in minutes, but I treasure that time so much.  

Hot Cocoa Cookies were the perfect dessert for Sunday dinner.    

THE RECIPE
The recipe I used is from Holly at Life in the Lofthouse.  While there is a little bit of work involved, these cookies are definitely worth it.  So delicious with a glass of cold milk or a cup of coffee.  You can find the recipe here.

{cookie project} No.001: Alphabet Sugar Cookies

The Cookie Project is a year-long experiment to combine my love for baking and trying new things.  

I don’t want to brag, but I can make a pretty awesome chocolate chip cookie.  The recipe has become second nature to me; I can whip up a batch before my oven is even finished preheating.  Unfortunately for the rest of the family, chocolate chip is the only cookie I make.  And while delicious (and my favorite!), I knew it was time to expand my horizons when the boys peeked at my Pinterest boards and asked, “Can we try some of those sometime?”.    

The Cookie Project was born.

For the first installment, I knew I wanted to choose a sugar cookie recipe.  D is always asking for “a cookie without chocolate in it” and I wanted to surprise him.  So Sophie and I put our hair up and got to work!


We used alphabet cookie cutters (similar to these) and the kids were insanely excited to find their names on the cooling racks.  I plan to use this recipe again soon and combine it with D’s kindergarten reading.  I think he’ll love “writing” words in cookie.

THE RECIPE
The recipe I used is from Katrina at In Katrina’s Kitchen.  I followed her directions exactly, only omitting the almond extract because I was out.  Still good.  You can find her recipe here.  Be warned, though.  Her website is full of amazing things!
