{30 days of pinspiration} Day 16: Menu Monday


I have Pinterest board entitled “Yummy Food” and I’m sure many of you do too.  I pin and pin and pin all of these delicious images and then…there they sit.  Out of over 300 pins, I think I’ve only actually made a handful?  Time to change that.  I’ve declared this first week of February to be “Virtual Cookbook Week” and I’m excited to try a bunch of new recipes.

{30 days of pinspiration} Day 12: Oatmeal Raisin Cookies

As part of our resolutions this year, my little family is trying to cut out processed foods.  The transition has been pretty painless…until we get to the sweet section of the store.  Goodbye Oreos.  See ya later Chips Ahoy!  To satisfy our sweet tooths (teeth?), I’ve decided to make cookies here at home.  Hence, my Pinterest board, The Cookie Project, was born!  Today’s recipe is a good one.  I added a big handful of chocolate chips to mine, but you definitely don’t need them…they are delicious as is.

Oatmeal Raisin Cookies

Ingredients:
2 cups all-purpose flour

½ teaspoon baking soda
½ teaspoon salt
1½ sticks butter, melted
1 cup packed brown sugar
½ cup white sugar
1 teaspoon cinnamon
1 tablespoon vanilla extract
1 egg
1 egg yolk
1½ cups old-fashioned oats
1 heaping cup raisins
1 cup milk chocolate chips (optional)


Instructions:
1. Preheat the oven to 325 degrees.

2. Melt butter and let cool slightly.
3. Mix flour, baking soda and salt; set aside.
4. In a medium bowl, cream together the butter, brown sugar and white sugar until well blended. Beat in the cinnamon, vanilla, egg, and egg yolk for 2 minutes or until light and creamy. Mix in the flour mixture until just blended. Add the oats, raisins, and chocolate chips. Mix until just blended.

5. Bake 14-16 minutes, until the edges are brown and the centers still slightly soft. Let the cookies rest on the cookie sheet for a couple of minutes before transferring to a cooling rack.  Enjoy!

{friendship} Supporting Mammas in the Kitchen with a Swap and a GIVEAWAY!

Back in February, I felt really convicted to reach out to Mammas with support and a little fun.  The purpose of the first Mamma Support Swap was to use the Internet to support mothers in all walks of life, connect us on a deeper level, and to celebrate this crazy vocation we’ve been called to.  Being a teeny little blog, I was so nervous that this idea of mine would crash and burn.  But I was blown away by the interest and the support!  And I knew this had to be something that happened more than once.

Enter the second Mamma Support Swap! 

This time around, the swap has a cooking theme.  We all know that the kitchen is the heart of our homes and as Mammas, we hold a great responsibility to feed our families. But boy, can that be an intimidating challenge!  Picky eaters, tight budgets and just overall exhaustion can all affect our meal planning.  I think we can all appreciate a little help!   



So this is the plan.  The Mamma Support Swap encompasses a few things:   

  1. Support: This time around, this part is up to you.  If you’d like, include a handwritten note to your partner, telling her about yourself and your family.  Feel free to add some advice about meal planning, budgets, or tips for picky eaters.  Words of encouragement are also great and always appreciated.  Words are powerful…you can do so much good.  
  2. Recipes:  Include at least two favorite recipes to share.  You can use recipe cards you already own, or there are tons of free printables out there (check a few out here, here and here).
  3. Swap:  A little something special purchased to help her in the kitchen or just make it pretty!  Let’s keep it in the $10-15 dollar range.  Ideas: your favorite cookbook, recipe cards, coffee mug, etc.  Anything kitchen/cooking related is fair game.  Be sure to check your partner’s blog if you need ideas!  

Like I said in February, my prayer is that through this swap, we can encourage each other on this wild adventure we call motherhood.  Hopefully we’ll even make a new friend!  So are you in?  Know a few friends who could use some support and need an inspiration boost in the kitchen?  I hope so!  Please comment below with your name, blog address (if you have one – it’s not mandatory to have one to enter) and e-mail address. {in the kitchen} Easy Peach Cobbler

Apparently, I’m a sucker for any dessert that fits in a 8″ square pan and includes fruit (exhibits A and B).  But nothing says summer like a cobbler, right? After a crazy, pregnant “I need peach cobbler right now!” moment, I scoured the web for an easy recipe, but nothing seemed easy enough.  Until this one!  One warning, in case you are particular about cobblers: this recipe makes a more cakey version.  I happen to love it that way, but you may have a different opinion. 

Ingredients:
8 fresh peaches, peeled, pitted and sliced into thin wedges (I used six, didn’t peel and cut into small chunks instead.  I’m a rebel.) 
1/4 cup sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch (I didn’t have any, so omitted.  Still tasted great)

Topping: 1 cup all-purpose flour
1/4 cup sugar

1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
1/4 cup boiling water

Mix together: 3 tablespoons sugar & 1 teaspoon ground cinnamon


1. Preheat oven to 425 degrees F.
2. In a large bowl, combine peaches, 1/4 cup  sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.               
3. Meanwhile, in a large bowl, combine flour, 1/4 cup sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with a pastry blender (or just your fingers), until mixture resembles coarse meal. Stir in water until just combined.

4. Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle entire cobbler with the sugar and cinnamon mixture. Bake until topping is golden, about 30 minutes. (It may just be my oven, but my cobbler was golden brown in half the time, about 13-15 minutes.) 

Enjoy warm with a scoop of vanilla icecream!

{in the kitchen} Blueberry Banana Bread

Talk about impulse.  While I probably should have been attacking that never-ending laundry pile, I instead made a dash to the kitchen to make Blueberry Banana Bread.  Word to the wise: don’t casually peruse cookbooks unless you’re ready to bake. Right.This.Instant!  I have no control when it comes to delicious quick breads.  The recipe comes from this book, which was actually an anniversary gift to my husband.  Enjoy.

Blueberry Banana Bread
from Ruhlman’s Twenty

2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
Salt
3 large eggs
1/4 cup buttermilk
1/3 cup sugar
1/4 cup butter, melted
2 bananas, mashed
1 teaspoon vanilla extract
1 teaspoon grated lemon zest (I omitted this because I didn’t have any lemons at home)
1 cup blueberries, tossed with 1 Tablespoon flour

Preheat the oven to 350.  Butter a loaf pan. 
In a medium bowl, combine the flour, baking powder, baking soda, and 1 teaspoon salt.  In a large bowl, combine the eggs, buttermilk, sugar, melted butter, bananas, vanilla, and lemon zest and mix well.  Add the flour mixture and whisk just to combine.  Stir in the blueberries.
Pour batter into pan.  Bake until a toothpick inserted into the bread comes out clean, about 1 hour.  Cool in the pan on a wire rack for 15 minutes.

{in the kitchen} Overnight French Toast Casserole

Ready for a long-winded background story about a recipe?  Here we go!  First off, you need to know two things:
1. I just finished reading my first book of 2012, Kisses from Katie.  (I’ll have my review of the book up tomorrow.)
2. I hate wasting food.  And after reading all about the little ones Katie cares for on a daily basis, I am even more committed! 

So I was in quite the predicament when I had three-quarters of an uneaten loaf of homemade bread the other day.  My kids love bread straight from the bread machine, but the next day….well, not so much.  I was determined not to waste (and not have to eat it by myself!) so I put on my thinking cap (aka Google) and found an awesome recipe I just had to share!

I put the recipe together in the afternoon with the intention of serving it for breakfast the next day, but quickly turned it into a “breakfast for dinner” meal.  It only sat in the fridge a few hours, but was still delicious.  I imagine it only gets better if it sits overnight!  Enjoy.

4 Tablespoons butter, melted
3/4 cup packed light brown sugar
1 loaf brioche or challah (I used regular white bread and it was still good)
8 eggs, slightly beaten
1 cup whole milk
1 Tablespoon vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger (optional – I didn’t have any and it still tasted great!)
1/2 cup pecans, measured then chopped (also optional – we have many non-nut eaters in our house)
1/8 teaspoon salt
maple syrup and/or powdered sugar for topping

In a small bowl, combine brown sugar and melted butter and pour on the bottom of a 9×13″ baking dish.  Arrange slices of bread in the baking dish, overlapping if necessary.  Combine milk, eggs, vanilla, salt, cinnamon, and ginger in a bowl and pour evenly over bread slices. If desired, sprinkle chopped pecans over bread slices. Wrap tightly with plastic wrap and place in the refrigerator for 4-12 hours. In the morning, take the casserole out of the fridge for at least 10 minutes while you are preheating your oven to 350 degrees. Bake casserole for 30-35 minutes. If top starts browning too quickly place a foil loosely over the top of the casserole for the last 10 minutes or so. You want it to cook long enough to make sure the bottom part is cooked but don’t dry it out completely. Remove casserole from oven and let it cool slightly before serving. Serve with a dusting of powdered sugar and a drizzle of maple syrup.

{in the kitchen} Reindeer Cupcakes

I surprised the boys right before bedtime last night with a little cupcake decorating party.  Their excitement was contagious.  I truly believe that if you’re stressed this Christmas season, you need only to stop and experience something through the eyes of your children.  It’s amazing how simple they make things.  

So on that note, blogging will be taking a back seat so I can fully experience the last few days of Advent with my sweet boys.  I want to thank all of you readers for coming back time and again to my humble little blog.  Your comments truly make my day (seriously…I excitedly tell my husband at dinnertime about every single one!).  What a blessing to meet and connect with girlfriends who have similar interests. 

Here’s wishing you a wonderful and relaxing Christmas holiday with the ones you love!

{in the kitchen} Baked Ravioli…so easy a tired Mamma can do it…

Yesterday was yucky and rainy.  We called off school, declared it “Pajama Day” and just lounged around and played all day.  It was relaxing and uneventful…just what I needed and bonus: the boys thought I was the coolest Mamma ever! 

Anyway, I wanted to share what we had for dinner: a super easy, but definitely hits the spot, recipe and perfect for a rainy day.  Add a salad and a loaf of crusty bread (I had neither, but it sounds yummy, doesn’t it?) and you’re good to go.  I think this would be a great freezer recipe or even to send over to a new mamma.  The possibilities are endless!

Baked Ravioli
1 bag of frozen ravioli
1 26oz. jar of marinara sauce (I used Amato’s Pasta Sauce…yum!  Thanks Aunt Rie!)
2 cups shredded mozzarella cheese
Parmesean cheese

Heat oven to 400.  Spray the bottom and side of a 9×13″ pan with cooking spray.  Spread 3/4 up of the pasta sauce in first.  Arrange half of the frozen ravioli in a single layer over the sauce.  Top with half of the remaining sauce, then half of the mozzarella.  Repeat layers, starting with the ravioli.  Sprinkle with Parmesean cheese.

Cover with foil and bake for 30 minutes.  Remove foil and bake uncovered for another 10-15 minutes or until bubbly.  Enjoy!

And for dessert, we made pumpkin chocolate chip cookies.  It was a good day.

{in the kitchen} Another Cooking “Experience” with the Boys

Cooking with my kids isn’t just cooking, it’s definitely an experience.  After the apple cake day, I should have learned my lesson, but oh no!  Wild and crazy Mamma did it again!

But I’m getting ahead of myself.  Last weekend, when my dad came over, I made him No Bake Vanilla Cake Batter Chocolate Truffles for his “Sweet Treat of the Month”.  (That was my birthday gift this year to the man who has everything…I make him a special sweet every month, package nicely and send it his way.  It’s been a great way to try out some new recipes!) 

M was dying to help, but I ended up waiting until after he went to bed to make them and he was pretty disappointed.  So, in another one of my “Hey!  Let’s change things up and be spontaneous!” moods, I surprised him with a second round of chocolate truffles.  To say they were excited would be an understatement! 

And OH. MY. WORD.  Another cooking experience for the books.  I couldn’t help but laugh and take pictures of this craziness.

 M was in chocolate dipping heaven, while D (who hates all things messy) sat there and immediately ate his hard work.  They weren’t pretty, but they tasted pretty good!

{in the kitchen} Enjoy the Last Days of Summer with Caprese Sandwiches & Salads

I do believe I was living under a rock until my dear cousin (and baby J’s godmother) introduced me to a culinary wonder: Caprese Sandwiches!  Incredibly easy to make and they look gorgeous when entertaining.

So in honor of the last few days of summer, here are a few variations that I just love!  I’ll be keeping these in mind for my next get together!

{chit chat} Recap Part Two

Unrelated to the post, but I thought it was good food for thought…

So…I forgot a few things I wanted to include in yesterday’s post!  I’m going to blame it on my crazy caffeine withdrawals.  I am trying (for the third time this year!) to kick my diet soda habit and get those artificial flavors/colors out of my system.  But wow!  I had a killer headache for most of the day!  We’ll see how today goes… 

Anyway, here is the recipe we used for the bread in the bread machine:
Oatmeal White Bread (in the bread machine)
1 1/4 cups milk
2 Tablespoons vegetable oil
1/2 cup oats
3 cups flour
2 Tablespoons sugar
1 teaspoon salt
1 1/2 teaspoons active dry yeast

Warm the milk in the microwave, so it’s barely warm when you touch it (for me, it was about 30 seconds).  Put the ingredients in the machine as recommended in your directions (mine says liquids first, then dry, then yeast).  Set your machine for 1.5lbs, LIGHT crust, and Basic/White Bread.  Press start and wait until it beeps!  

Side note: I actually bribed my children with the first slice of bread for whoever picked up their toys the fastest.  And it worked!   

WEARING.  I can feel fall approaching and I am so excited to pull out the sweaters and jeans!  I just ordered a few things from Lands End Canvas and was really pleased with the quality.  Have you ever ordered from them?  

REMEMBERING.  Another fun find from another blog was 280daily.com.  Easily accessible from your smart phone, it’s a way to journal and can be used for many things: a food diary, record of what you did that day, etc etc.  I decided to use it as a gratitude journal.  I get a reminder e-mail everyday at 4PM, so I never forget.  And the coolest part is that at some point, I have the option of printing out or having a book bound with the entries I wrote.  So neat…and a great way to have a gratitude journal for this busy mamma!

{in the kitchen} A Family Attempt at One Bowl Apple Cake

To round out our first week of school, I thought a little “cooking school” would be fun.  The boys are always begging to help in the kitchen, so I sifted through my “to bake” recipes and found this gem: One Bowl Apple Cake.  In theory, it’s the perfect recipe for baking with little people.  One bowl.  Easy ingredients.  Easy peasy.  I couldn’t wait for our special baking session.

HAH.  Oh man.  Let’s just say, when you have an overtired baby attached to your hip and two over-eager kids fighting to help, cooking is more than just cooking…it becomes an experience!     

The cake was definitely good, but because of all of the above mentioned craziness, I didn’t watch the last few minutes and almost burnt the whole thing.  Nothing a little (or a lot) powdered sugar won’t fix!  The boys were so excited with their creation. Their giddiness make “cooking school” totally worth it, so I know we’ll be baking together again soon. 

I’m definitely going to make this cake again…all by myself!
