No.248: New Habits, Little by Little: Cooking at Home (End of April & May 2019)

Oh May…you were not a good month for healthy eating.  I debated even posting this because it’s so ridiculous; it seems eating out and frozen food were our staples!  With Lucy finally sleeping through the night and our summer schedule calming down, I’m hoping to get back into a groove soon.

Week 95 (cont.):
Sunday, April 21: Easter! pulled pork, Mark’s homemade mac & cheese, biscuits and strawberries with candy galore for dessert!

No.239: 40 Days of Lenten Soups // Part Three

Easter is almost here and I’m so ready!  Below are the soups from the last two weeks of Lent and what we plan to eat on the last few days of Holy Week:

Wednesday: leftovers

Thursday: Whenever a new baby is about to be born in our family, we always go out for a special dinner as a last hurrah to the current crew and to build anticipation for the arrival.  With the new puppy coming on Friday, we continued our tradition and went out for pizza!

Friday: Lucy arrives! Tomato Basil Parmesan Soup

Saturday (Week 93): in the thick of new puppy craziness, Mark and I had frozen taquitos and the kids had hotdogs (so random)

Fifth Sunday of Lent: grilled chicken Caesar salads

Monday: leftovers
Tuesday: Sicilian Chicken Soup

Wednesday: picked up burgers while in town for a vet appointment

Thursday: Panera Chicken and Wild Rice Soup

Friday: we had a late snack of greek yogurt, granola and frozen blueberries and totally ruined our appetite for dinner

No.237: 40 Days of Lenten Soups // Part Two

As we round the corner onto the Lenten home stretch, we’re still (mostly) going strong on soup dinners.  So many lessons learned already!  On the days where we’re just “not in the mood” for soup or we don’t want to eat leftovers again or we just want to chew something (hah!), we’re reminded how fortunate we are to have food to eat at all.  We’re able to return to gratitude for our daily bread.  Who knew forty days of soup could expose and help sanctify our selfishness?     

Below are the soups we tried for the middle two weeks:

Wednesday: leftovers

Thursday: Tomato Soup & grilled cheese sandwiches

Friday: Ditalini Spinach Soup

INGREDIENTS // 2T. olive oil, 1 cup each of onions, carrots and celery (all diced), 3 cloves minced garlic, 6 cups chicken broth, 15oz. can of fire-roasted diced tomatoes, 1.5 cups ditalini, 1/2tsp. thyme, 1/4tsp. oregano, 4 cups spinach, salt and pepper
DIRECTIONS // Heat oil in a large stock pot over medium-high heat.  Add onion and saute until soft.  Add carrots, celery and garlic and saute another 4 minutes or so.  Add broth, tomatoes, ditalini, thyme, and oregano.  Stir, then bring to a simmer, stirring occasionally.  Reduce heat to medium-low and simmer 11-13 minutes, until the pasta is al dente.  Stir in spinach and cook for another 1-2 minutes.  Season with salt and pepper and serve with a little Parmesan cheese on top.  (I also poured in a little half & half to make it creamier, but it’s not necessary.)

No.232: 40 Days of Lenten Soups

As a family, we’re planning to eat a lot of soup during Lent this year.  We have a few exceptions (a rare date night, two of the boys’ feasts days and an occasional Sunday dinner), but the rest of the week will have soup on the menu for dinner.  I’m hoping this simpler menu will help us appreciate the true spirit of Lent.  Below are the soups (and some recipes!) for the first two weeks:

Ash Wednesday: Creamy Tomato Tortellini Soup & grocery store baguettes

Thursday: Beef Stew 

INGREDIENTS // 2lb stew beef, onions chopped, celery chopped, carrots peeled and chopped, mini red potatoes, 28oz. can whole tomatoes, 1.5tsp. Italian seasoning, 3 cups beef broth, 2 bay leaves, frozen peas, salt and pepper, and 0.5 cup flour
DIRECTIONS // Lightly brown the stew meat in batches in a large skillet on medium-high heat.  Transfer to a plate and set aside.  Dump tomatoes and their juices into the slow cooker and mash them a little.  Add onions, celery, carrots and potatoes.  (The amounts of these depends on who I’m feeding and how much I have in my refrigerator.  In my house, it’s generally the more, the merrier!)  Sprinkle Italian seasoning over the vegetables and then add beef and drippings.  Pour 2.5 cups beef broth over all, stir quickly, add bay leaves and cover.  Cook on low for 8 hours.  20 minutes before serving, add the frozen peas (about 1 cup) and salt and pepper to taste. In a small bowl, whisk the last 0.5 cup of broth with the flour to make a smooth paste.  Stir into stew and cook until thickened, about 15-20 minutes.  Remove bay leaves and enjoy!

Friday: Broccoli Cheddar Soup & store-bought baguettes

Saturday (Week 89): Mark and I went on a date!  We had burgers and the kids had pizza at their grandparents  

First Sunday of Lent: leftovers

Monday: Chicken Pot Pie Soup & homemade cheddar biscuits
Tuesday: White Chicken Lasagna Soup

Wednesday: Ember Days. leftovers

Thursday: Clean-Eating Chili & tortilla chips

Friday: Ember Days. Tomato Basil Parmesan Soup

INGREDIENTS // 28oz can diced tomatoes with juice, 1 cup each of finely diced celery, carrots and onions, 1tsp. oregano, 1T. basil, 4 cups chicken broth, 1 bay leaf, 1/2 cup flour, 1 cup Parmesan cheese, 1/2 cup butter, 1.5 cups warm half and half, salt and pepper to taste
DIRECTIONS // Add tomatoes, celery, carrots, chicken broth, onions, oregano, basil and bay leaf into a slow cooker.  Cover and cook on low for 5-7 hours.  About 30 minutes before serving, prepare the roux: melt butter over low heat in a skillet and add flour.  Whisk constantly for 5 minutes.  Slowly stir in 1 cup of hot soup until smooth.  Stir the roux back into the slow cooker, then add Parmesan, warmed half and half and salt and pepper to taste.  Cover and cook on low for another 15-30 minutes until read to serve.

Saturday (Week 90): Ember Days. leftovers

Second Sunday of Lent: Spaghetti and Meatballs (not at all St. Patrick’s Day-appropriate, but one of the kids requested it so on the menu it went!)

Monday: Cheeseburger Soup

Tuesday: J’s feast day! tacos and chocolate chip cookies

No.228: New Habits, Little by Little: Cooking at Home (February & Early March 2019)

What a month!  We suffered through a family-wide stomach flu, ate too many dinners out and didn’t try many new recipes, but some months are like that.  Looking forward to March and getting into a better routine.  (Adding in a few extra days of meals in March because I’ll be documenting our meals during Lent a little differently.)

Week 83 (cont.):

Saturday, February 2: leftovers
Sunday, February 3: after attending the Latin Mass, we picked up BBQ from our favorite local spot
Monday, February 4: breakfast for dinner – crepes
Tuesday, February 5: Mark’s birthday! steak for Mark and homemade bacon cheeseburgers for the rest of us
Wednesday, February 6: garlic-parmesan sausage and veggies
Thursday, February 7: arroz con pollo
Friday, February 8: a stomach bug hits the house, so those still healthy just ate leftovers and cereal

Week 85:
Saturday, February 9: my turn with the stomach bug – the others were on their own for dinner!
Sunday, February 10: the stomach bug continues – the ones who felt up to it had brats and potatoes
Monday, February 11: gyros
Tuesday, February 12: Refrigerator Clean-Out Night
Wednesday, February 13: double decker tacos
Thursday, February 14: Valentine’s Day! we surprised the kids with a dinner out at Chick-fil-A

Week 86:
Saturday, February 16: tomato soup with grilled cheese sandwiches
Sunday, February 17: roast beef sandwiches
Monday, February 18: french onion meatballs and mashed potatoes
Tuesday, February 19: breakfast for dinner – eggs, bacon, and Mark’s homemade biscuits
Wednesday, February 20: cheese quesadillas with chips and salsa
Thursday, February 21: out for burgers
Friday, February 22: shrimp fried rice and frozen egg rolls

Week 87:
Saturday, February 23: we picked up pizza from a local place while out running errands (a new place for us and SO good!)
Sunday, February 24: top round roast sandwiches
Monday, February 25: chicken pot pie soup with homemade biscuits
Tuesday: February 26: roasted chicken with potatoes, onions and carrots (using my go-to recipe from Dinner: A Love Story)
Wednesday, February 27: mini meatloaves with potatoes and green beans
Thursday, February 28: the chicken went bad (#mealplanningfail), so we went out for pizza instead
Friday, March 1: vegetable egg rolls

Week 88:
Saturday, March 2: out in town to pick up a kid and run errands, so we got Chick-fil-a before heading home
Sunday, March 3: gyros
Monday, March 4: breakfast for dinner – mini pancakes
Tuesday, March 5: Fat Tuesday! pepperoni and supreme pizzas

No.218: New Habits, Little by Little: Cooking at Home (January 2019)

It took us until the end of the month to get our act together, but we’re bringing big Sunday dinners back!  Everyone pitches in – some cook, some set the table, some fill the drinks – and then we sit around our big dining room table, eating and chatting about the week ahead.  Such a nice way to celebrate the Sabbath and round out the weekend.

Wednesday, January 23: take-and-bake pizzas from the grocery store
Thursday, January 24: balsamic chicken veggie bake
Friday, January 25: Panera copycat french onion soup

Week 83:
Saturday, January 26: sheet pan mini meatloaves with potatoes and green beans
Sunday, January 27: ham, mashed potatoes, bacon brussels sprouts and rolls
Monday, January 28: T’s patron saint’s feast day! meatball subs and chocolate chip cookie ice cream sandwiches
Tuesday, January 29: Refrigerator Clean-Out Night
Wednesday, January 30: Mark worked late, so we had grilled cheese sandwiches and popcorn (#random)

Wednesday, December 19: Ember Days. spinach artichoke lasagna rollups (need to tweak this recipe a bit next time)
Thursday, December 20: hearty beef stew and crusty bread

Week 78:

Sunday, December 23: so random: salads for the adults, Ramen and cereal for the kids
Monday, December 24: Christmas Eve. pizza dip, meatballs, and fried chicken wings
Tuesday, December 25: Christmas Day! ham and turkey breast, corn, mashed potatoes, macaroni and cheese, rolls, and lots of cookies for dessert
Wednesday, December 26: Mark’s homemade chicken fingers and leftovers from Christmas Eve
Thursday, December 27: garlic-parmesan sausage and veggies
Friday, December 28: breakfast for dinner – pancakes, eggs and bacon

Sunday, November 18: we ate random things from the pantry after discovering that our cooktop isn’t working (whyyyyy??)

Fall is finally here!  We’ve officially instituted our weekly Soup Night and unintentionally started a breakfast for dinner night too.  We’re just as busy as ever, but slowly falling into a routine.  Praise God for that!

No.185: New Habits, Little by Little: Cooking at Home (September 2018)

September was a blur and made meal planning quite tricky.  How you eat healthily while running around town is beyond me!  We ate out much more than usual, but I’m trying to give myself some grace in this area.  We’ll find some sort of groove soon…I hope.

Tuesday, September 18: Mark business trip. leftovers and funfetti cupcakes
Wednesday, September 19: TJ’s birthday! out for pizza and choco-tacos
Thursday, September 20: slow cooker parmesan honey pork roast, mashed potatoes and broccoli
Friday, September 21: burgers and fries

Week 65:
Saturday, September 22: frozen pizzas and cookie cake (celebrating S’s birthday early!)
Sunday, September 23: white chicken chili, served with salsa and tortilla chips (I used a rotisserie chicken to make it easier)
Monday, September 24: S’s birthday! slow cooker beef stew
Tuesday, September 25: roasted brats and vegetables
Wednesday, September 26: we were supposed to attend “Food Truck Wednesday” but it was cancelled due to rain, so we grabbed burgers instead
Thursday, September 27: meat and veggies paleo chili (we subbed the zucchini for butternut squash)

Wednesday, August 1: chimichurri chicken and rice
Thursday, August 2: breakfast for dinner – scrambled eggs and sourdough waffles
Friday, August 3: popcorn and vanilla pudding pie (so random!)

Week 58: 
Saturday, August 4: Mark’s homemade pepperoni and supreme pizzas
Sunday, August 5: french onion meatballs with mashed potatoes and broccoli
Monday, August 6: pasta and homemade meat sauce with salad
Tuesday, August 7: garlic-parmesan vegetables and sausage
Wednesday, August 8: tacos
Thursday, August 9: Refrigerator Clean-Out Night
Friday, August 10: chicken and cheese quesadillas

Week 59:
Saturday, August 11: burgers and fries while we were out running errands
Sunday, August 12: Mark’s homemade chicken fingers and french fries
Monday, August 13: slow cooker french dip sandwiches
Tuesday, August 14: three cheese chicken broccoli alfredo
Wednesday, August 15: homemade pizza
Thursday, August 16: breakfast for dinner – “apple pie” sourdough waffles
Friday, August 17: BBQ at our favorite local place to celebrate something big!

Week 60:
Saturday, August 18: leftovers
Sunday, August 19: egg roll bowls
Monday, August 20: First Day of School! Little Caesars pizza to celebrate a successful first day
Tuesday, August 21: tacos
Wednesday, August 22: shredded chicken over rice with broccoli
Thursday, August 23: brats
Friday, August 24: baked chicken with spinach and artichokes

Week 61:
Saturday, August 25: leftovers
Sunday, August 26: french onion meatballs with mashed potatoes
Monday, August 27: one pan harvest pasta
Tuesday, August 28: grinder sandwiches
Wednesday: August 29: we had a late lunch after our field trip, so just ate popcorn and other random things from the pantry
Thursday, August 30: baked garlic parmesan chicken and broccoli
Friday, August 31: homemade pepperoni pizza

No.161: New Habits, Little by Little: Cooking at Home (July 2018)

July was a full month of holidays and travel.  Looking down the list, I had to laugh at the amount of pizza I ate.  It’s a little excessive, but really, is there anything better than a fresh from the oven slice of cheesy goodness?  I don’t think so.

Week 53 (cont.):
Sunday, July 1: pork tenderloin, rice and broccoli
Monday, July 2: meatball subs
Tuesday, July 3: brats, chips and fruit salad
Wednesday, July 4: Independence Day! pulled pork sandwiches, coleslaw, Mark’s panko mac and cheese, watermelon, beans, with a cookie cake and rice krispie treats for dessert
Thursday, July 5: breakfast for dinner – sourdough waffles, eggs, bacon and watermelon
Friday, July 6: beans and rice kielbasa skillet

Week 54: 
Saturday, July 7: pesto chicken, tortellini and veggies
Sunday, July 8: chicken caesar wraps
Monday, July 9: pastalaya
Tuesday, July 10: chicken thighs, rice and broccoli
Wednesday, July 11: leftovers
Thursday, July 12: I flew to Maine for a cousin weekend! homemade pizzas
Friday, July 13: Maine trip. out for pizzas at Flatbread Company

Week 55:
Saturday, July 14: Maine trip. burgers from Vandy’s
Sunday, July 15: Wendy’s on the way home from the airport
Monday, July 16: out for pizza because we desperately needed to get to the grocery store!
Tuesday, July 17: baked ziti
Wednesday, July 18: Indian chicken curry with rice
Thursday, July 19: Mark’s homemade pepperoni pizza
Friday, July 20: out for burgers while running errands

Week 56:
Saturday, July 21: cheesy enchilada casserole (we used ground beef instead of chicken)
Sunday, July 22: chicken pot pie soup with homemade biscuits
Monday, July 23: chicken yakisoba
Tuesday, July 24: garlic-parmesan veggies and sausage over rice
Wednesday, July 25: drunken noodles with shrimp
Thursday, July 26: breakfast for dinner: french toast with yogurt and blueberries
Friday, July 27: Day Trip to the Zoo! late lunch/early dinner at Zaxby’s on the way home from the zoo

Week 57:
Saturday, July 28: pulled pork sandwiches with coleslaw
Sunday, July 29: pulled pork nachos using leftovers from yesterday
Monday, July 30: sheet pan roasted chicken with root vegetables (we doubled this)
Tuesday, July 31: beans and rice
